白兰地（Brandy）最早起源于法国。18世纪初，法国的查伦泰河（Charente）的码头因交通方便，成为酒类出口的商埠。由于当时整箱葡萄酒占船的空间很大，于是法国人便想出了双蒸的办法，去掉葡萄酒的水分，提高葡萄酒的纯度，减少占用空间而便于运输，这就是早期的白兰地。1701年、法国卷入了西班牙战争，白兰地销路大减，酒被积存在橡木桶内。战争结束以后，人们发觉贮藏在橡木桶内的白兰地酒，酒质更醇，芳香更浓，而且还有晶莹的琥珀色，这样，世界名酒白兰地便诞生了。因此，用橡木桶贮藏和贮藏的年限便成为酿制白兰地的重要环节。
在法国当地流传这样一句谚语：男孩子喝红酒，男人喝跑特（Port），要想当英雄，就喝白兰地。人们授予白兰地以至高无上的地位，称之为英雄的酒。
白兰地通常的意思是“葡萄酒的灵魂”。白兰地一词分狭义和广义之说，从广义上讲，所有以水果为原料发酵蒸馏而成的酒都称为白兰地。但现在已经习惯把以葡萄为原料，经发酵、蒸馏、贮存、调配而成的酒称作白兰地。若以其它水果为原料制成的蒸馏酒，则在白兰地前面冠以水果的名称，例如苹果白兰地、樱桃白兰地等。
